A traditional heritage variety, ‘Filderkraut’ is a distinctive pointed cabbage known for its tender leaves, excellent flavour and versatility in the kitchen. Selected by River Cottage, it’s a reliable and rewarding choice for home growers.

Producing tall, conical heads with crisp, finely textured leaves, this variety is particularly well suited to fresh use as well as fermentation - making it a favourite for sauerkraut. Its lighter structure and sweet flavour set it apart from more compact cabbage types.

Easy to grow and productive, ‘Filderkraut’ thrives in well-prepared soil and is ideal for kitchen gardens, allotments and raised beds.

  • Sowing:
Sow seeds indoors from March to May in trays or modules. Sow thinly and cover lightly with compost. Alternatively, sow outdoors in a seedbed from April onwards.

    Germination:
Typically takes 7–14 days. Keep compost moist but not waterlogged.

    Planting out:
Transplant seedlings once they are large enough to handle and have developed a few true leaves. Space plants around 45–60cm apart to allow room for full heads to form.

    Position:
    Prefers a sunny, open position.

    Soil:
Grow in firm, fertile soil enriched with organic matter. Cabbages perform best in soil that retains moisture.

    Care:
Water regularly, especially in dry periods. Firm soil around the base of plants to support growth and prevent rocking.

    Harvesting

Harvest from late summer through autumn, once the heads are firm and well formed. Cut at the base with a sharp knife.

For smaller, tender heads, harvest slightly earlier. For larger cabbages, allow more time to mature fully.

    Top tip

Rotate crops each year and avoid planting in the same spot as other brassicas to help prevent pests and disease.
