A traditional and reliable variety, ‘Halblange’ parsnip produces smooth, tapered roots with excellent flavour and a tender texture. Selected by River Cottage, it’s a dependable choice for home growers looking for a classic winter crop.

Known for its slightly shorter, thicker roots, this variety performs well even in heavier soils where longer varieties can struggle. The flavour develops beautifully after the first frosts, becoming sweeter and more complex - perfect for roasting and hearty seasonal dishes.

Slow to establish but highly rewarding, parsnips are a true grower’s crop, offering a generous harvest through autumn and winter.

  • Sowing:
Sow directly outdoors from March to May in deep, well-prepared soil. Sow thinly in drills around 1–2cm deep.

    Germination:
Can be slow and irregular - typically 2–4 weeks. Keep soil consistently moist.

    Thinning:
Thin seedlings gradually to around 15–20cm apart.

    Position:
    Prefers a sunny, open position.

    Soil:
Best grown in deep, stone-free, well-drained soil to allow straight root development.

    Care:
Keep weed-free and water during dry spells. Avoid transplanting, as this can cause root distortion.

    Harvesting

Harvest from late autumn through winter. Roots can be left in the ground and lifted as needed - flavour improves after exposure to frost.

    Top tip

Use fresh seed each year, as parsnip seed has a short viability and germination rates drop quickly.
